Scrambled Eggs with Scallions, Cheddar Cheese and BACON

Fast, easy breakfast for two.

You'll need:
2-3 eggs
1 large scallion
2 slices or a small chuck of cheddar
4 Tbsp bacon

Slice scallion, chop cheddar into small cubes, chop bacon into small cubes.

In a small bowl, lightly whip the eggs. Add scallions and cheddar.

In a skillet, fry bacon. You can add oil, but bacon tends to be fatty enough on its own not to need it. When the bacon is crispy, add egg mixture. Stir with spatula until eggs are done.

Serve warm. Garnish with tomatoes or parsley if you have handy. Provide tabasco, salt and pepper for seasoning if you've got them.
